Smash Burger Tacos

Ingredients:
1 lb (450g) ground beef (80/20 blend)
8 small flour tortillas
Salt and freshly ground black pepper
8 slices of cheddar cheese
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup diced red onions
Pickle slices
Special sauce (see below)
For the Special Sauce:
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon finely chopped pickles
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions:
1. Prepare the Special Sauce:
In a bowl, mix all the sauce ingredients until well combined. Refrigerate until ready to use.
2. Form the Beef Balls:
Divide the ground beef into 8 equal portions and roll them into balls. Season each with salt and pepper.
3. Cook the Smash Burgers:
Heat a griddle or large skillet over medium-high heat. Place a beef ball on the skillet, top with a tortilla, and press down firmly to flatten the beef into a thin layer adhering to the tortilla. Cook for 2-3 minutes until the beef is browned and crispy. Flip, place a slice of cheese on the beef side, and cook for another 1-2 minutes until the cheese melts.
4. Assemble the Tacos:
Remove from heat and top each taco with shredded lettuce, diced tomatoes, red onions, pickle slices, and a drizzle of the special sauce.
5. Serve:
Serve immediately while hot and enjoy!
